At the beach earlier this summer, we made watermelon granita...it was oh so good and so refreshing. Perfect for a hot summer afternoon!
Watermelon Granita (based on the Food Network recipe)
Ingredients
* 4 cups seedless watermelon chunks
* 1/2 cup sugar (we made a simple syrup by adding the sugar to a 1/2 cup of simmering water until completely dissolved)
* Juice of 1 lemon
Directions
Combine all ingredients in a food processor or blender. Puree until smooth. Pour into a shallow, wide pan and freeze for 1 hour. Rake mixture with fork and freeze for another hour. Rake and freeze for one more hour. Rake and serve in cups (we served it with creamy vanilla ice cream...sorta like a gelati). Enjoy!

you forgot the Smirnoff
The funny thing is that my mom just asked me what Smirnoff is the other day (she doesn't drink a lot of adult beverages)...but, I'm pretty sure she'd like a little added to her watermelon slushie! I think I'd like it too! :)
